Grilled Peaches & Romaine Caesar Salad
MY FAVORITE MAGNESIUM RICH RECIPE FOR SUMMER
Indulge in a refreshing twist on summer salads with our Grilled Peach and Romaine Caesar Salad, packed with flavors that celebrate summer. The sweetness of grilled peaches complements the romaine lettuce. Not only is this salad delicious, but it also offers a nutritious boost to your magnesium levels, supporting overall health and well-being.
Ingredients:
- 1/3 cup Pecorino Romano cheese, grated
- 1/3 cup Good Life Olive Oil, plus more for brushing on peaches and romaine
- 2 oz Flat anchovies
- 1/4 cup Fresh mint, torn
- 4 Fresh peaches, pits removed and sliced
- 2 Garlic cloves, minced
- 1/4 cup Grated parmesan cheese
- 3 Hearts of romaine lettuce, cut the whole hearts in half from top to root
- 3 tbsp Lemon, juiced
Instructions:
- Preheat grill to 350˚F or medium heat.
- In a blender or food processor, add anchovies, garlic, Parmesan, lemon juice and olive oil, pulse until smooth. Refrigerate until ready to use.
- Brush peaches and romaine leaves with olive oil. Grill romaine leaves, cut side down, for 3 to 5 minutes or until warm with grill marks. Grill peaches 2 to 3 minutes per side.
- Assemble salad by placing peaches on top of grilled romaine wedges. Drizzle with Caesar dressing and sprinkle percorino and fresh mint over the top.
